The Planetary Health Diet was developed by the EAT-Lancet Commission with the aim of creating a diet that promotes good health and protects the environment. Based on a flexitarian diet – that means it is predominantly plant-based with moderate amounts of animal products – it provides all the essential nutrients while helping to conserve natural resources.
At the Coop restaurant, you can put together your own meal in line with the principles of the Planetary Health Diet. Tip: Start at the hot buffet and help yourself to a selection of vegetables – ideally, you should fill about half your plate with veggies. Go for variety and seasonal produce, if possible. Next, add a starchy side and a source of protein to your plate. Whenever possible, opt for plant-based proteins such as tofu or legumes. These are an important part of a sustainable diet. In summer, you might fancy a large plate of salad from the buffet, topped with crunchy seeds for extra nutrients and texture.
